Bramboracky (Czech Savory Potato Pancakes)

Bramboracky (bram-bor-atch-key) are traditional pan-fried Czech savory potato pancakes. They’re best accompanied by beer. My Czech boyfriend and I often have fun with this recipe. Potato pancakes are commonly associated with traditional Czech, Ukrainian, Yiddish, German, Hungarian, and Polish cuisines, although other cuisines (including those of India and Korea) also have similar potato pancakes.

Cook Time: 30 mins

Total Time: 1 hr

Servings: 3

Ingredients

  • 4 large potatoes
  • 3 cloves garlic, crushed
  • 2 teaspoons caraway seeds (Optional)
  • 1 pinch dried marjoram (Optional)
  • salt and ground black pepper to taste
  • 2 eggs
  • 1 tablespoon milk
  • 3 tablespoons all-purpose flour
  • oil for frying

Steps

  1. Peel and coarsely grate potatoes; squeeze out as much liquid as you can. Transfer shredded potatoes to a mixing bowl; stir in garlic, caraway seeds, marjoram, salt, and black pepper.
  2. Beat eggs and milk together; stir into potato mixture until well combined. Gradually stir in flour until a thick but still pourable batter if formed.
  3. Heat about 1/4-inch oil in a skillet over medium-high heat. Drop 1/4 cupful batter into skillet, flattening it slightly; fry until golden brown, about 3 minutes on each side. Drain on paper towels. Taste pancake; adjust seasoning if necessary. Repeat with remaining batter.
